Korean restaurant Jin Doshirak opens in downtown Louisville [Video]

LOUISVILLE, Ky. — The chef of the former Osaka sushi restaurant in downtown Louisville has opened his own restaurant.

Jin Doshirak translates to “lunchbox” and is the newest Korean restaurant in the city. The official ribbon cutting was held on Monday.

Executive chef Song Kim mixes Korean lunch foods like bibimbop with his sushi skills.

The Osaka restaurant where he formerly worked burned down in September, leaving a sushi-shaped hole downtown.

Kim wanted to keep his work downtown to fill the space.

“I know it’s a little down right now, but downtown is a pretty good place to visit. All the travelers and conventions, when they come downtown, they don’t have any place to go. I hope this makes them happy to have lunch or dinner when they stay in the hotel,” he said.
