Easy Creamy Cajun Chicken – This quick and easy recipe is a perfect for dinner for two or 3 meal prep lunches.
Serves 2 or 3 meal prep lunches.
Ingredients:-
2 large chicken breasts, flattened
2 garlic cloves, minced
1/2 red pepper, diced
1/2 green pepper, diced
1/2 tbsp tomato paste
210ml chicken stock
60g reduced fat cream cheese
20g grated parmesan
parsley, chopped for garnish
Cajun seasoning:-
1/2 tbsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp dried thyme
1/4 tsp cayenne
Directions:-
First off mix all the Cajun seasoning ingredients in a bowl and split this into 2 halves, set 1 half aside and rub the other half onto the flattened chicken.
Heat a large pan on a medium heat, spray with low fat cooking spray and fry the seasoned chicken for 5 minutes on each side and remove this from the pan.
Next add the peppers and garlic to the pan and fry this for 1 minute, now add the chicken stock, cream cheese, tomato puree and Cajun seasoning, mix this up until the cream cheese has melted.
Now place the chicken back into the pan and cook this until the chicken is cooked through and the sauce has thickened.
Lastly, stir in the parmesan and season if needed.
Garnish with the chopped parsley for a pop of colour and serve.
Optional:-
1 cup of cooked rice.
